Tasting Note
Dense, dark ruby; ripe black cherry, blackberry and cassis with dark chocolate, coffee, licorice and balsamic herbs. Velvety, structured tannins, vibrant acidity and a long, savory finish.

Food Pairing
Western: braised short ribs, roast lamb, aged Pecorino or Parmigiano, beef brisket. Asian: Peking duck, char siu pork, Korean BBQ (galbi), spicy Szechuan beef or hoisin-glazed dishes.

Production Method
Controlled-temperature fermentation with ~25 days maceration and frequent pump‑overs; aged 18 months in French oak barriques, then ~12 months in bottle. Organic viticulture.

Family-owned Tenuta Sette Ponti (Moretti Cuseri); estate in Valdarno di Sopra producing Supertuscan wines since 1998. Vineyards include Vigna di Pallino and older parcels; organically certified since ~2020.
