Tasting Note
Dense dark-fruited core of blackberry and black cherry with cocoa, tobacco, graphite and mint; velvety, savory tannins and long, persistent finish.

Food Pairing
Western: grilled ribeye, roast lamb, braised short ribs, aged pecorino and Parmigiano; Asian: Peking duck, Korean BBQ (bulgogi), teriyaki beef, spicy Sichuan beef or mushroom stir-fry.

Production Method
Hand-harvested, destemmed; fermentation in temperature-controlled and open-top tanks with malolactic fermentation; aged ~18 months in French oak barriques, then bottled.
