Tasting Note
Dark ruby with blackberries, currant, violets, graphite, dark chocolate and cedar; full-bodied, velvety yet firm tannins and an intensely long, oak-tinged finish.

Western: bistecca alla Fiorentina, roasted or braised red meats, game, aged hard cheeses. Asian: Peking/roast duck, Korean BBQ (bulgogi/galbi), Sichuan beef, grilled wagyu.

Production Method
Hand-harvested; 25 days fermentation with frequent pump-overs and malolactic; aged ~18 months in French oak barriques, then ~12 months in bottle.
