Tasting Note
Intense ruby. Ripe cherry, blackberry and violet with orange peel, sweet spice and subtle oak. Medium–full, concentrated, with juicy, grippy tannins and a saline, persistent finish.

Food Pairing
Western: roast beef, braised short ribs, game, aged pecorino/parmesan. Asian: Peking duck, Korean BBQ (bulgogi), char siu or grilled Sichuan beef, teriyaki beef skewers.

Production Method
Hand-harvested, temperature-controlled fermentation with ~20 days maceration; aged 12–14 months in French barriques (≈40% new); certified organic.
