Tasting Note
Concentrated, full-bodied Shiraz showing roasted meat, blackberry, elderberry, black olive, pipe tobacco, dark chocolate and anise; lifted acidity, powdery tannins and a long, savory finish with high-quality oak.
Food Pairing
Western: roast lamb, char-grilled ribeye, braised short ribs, aged cheddar. Asian: Korean BBQ (bulgogi/galbi), char siu, Sichuan-style beef, miso-glazed eggplant, grilled yakitori.
Production Method
Single-vineyard (Garden of Eden) Shiraz; traditional red fermentation and extended oak maturation in high-quality barrels (French/American) for c.12–20 months; bottled under screwcap.
