Tasting Note
Medium-amber tawny with roasted nuts, butterscotch, praline, dried citrus and baked almond biscuit. Lusciously sweet yet lifted by freshness and a fine rancio edge.

Food Pairing
Western: aged cheddar, blue cheese, crème brûlée, sticky toffee pudding. Asian: mooncake, red-bean desserts, mango sticky rice, char siu with hoisin glaze.

Production Method
Single-vintage fortified wine; fermentation is cut with grape brandy then matured oxidatively in old oak hogsheads for 21 years before bottling.
