Tasting Note

Deep mahogany with amber edge. Notes of dark coffee grounds, bittersweet dark chocolate, vinocotto acidity, hazelnut, dried figs and mandarin peel; incredibly viscous with long, refined finish.


Food Pairing

Western: dark chocolate tart, crème brûlée, sticky date pudding, aged cheddar, pecan pie. Asian: five-spice roast pork, Peking duck pancakes, red‑braised pork (hong shao rou), almond cookies, mooncakes.


Production Method

Fortified during fermentation with grape spirit, then matured oxidatively in small oak hogsheads in Seppeltsfield’s Centennial Cellar for 100 years before bottling.

Seppeltsfield, founded in 1851 by Joseph Seppelt; Benno Seppelt established the Centennial Cellar in 1878. The estate is renowned for its uninterrupted century‑old Para releases and historic Barossa provenance.
