Tasting Note
Deep mahogany with amber rim. Lusciously viscous: bittersweet dark chocolate, espresso, dried figs, prune, caramel and toasted hazelnut, lifted by bright blood‑orange acidity and rancio spice; extraordinarily long, layered finish.
Food Pairing
Western: dark chocolate, sticky toffee pudding, crème brûlée, aged blue and hard cheeses, foie gras. Asian: mooncake, Peking duck with hoisin glaze, Chinese red‑cooked (hong shao) pork, sesame desserts, spiced sticky rice.
Production Method
Fruit crushed via gravity/foot‑pressing, fortified with grape spirit, then matured in old oak puncheons and barrels in the Centennial Cellar for ~100 years; barrels are regularly topped and sometimes transferred to smaller casks to concentrate.
Vineyard Info
Seppeltsfield estate (est. 1851) created the Centennial Cellar in 1878 (Benno Seppelt). Family legacy producing an unbroken single‑vintage 100‑year tawny series; internationally prized and collectible.
