Tasting Note
Bright cherry and raspberry with musky plum, dried spice, sage and star anise. Medium–full bodied, savoury red-fruited core, fine chalky tannins and a long mineral-tinged finish.

Food Pairing
Western: roast lamb, pork belly, grilled sausages, tomato-based pasta, charcuterie. Asian: char siu, Korean BBQ, Szechuan beef, Malaysian laksa (moderately spicy), grilled teriyaki duck.

Production Method
Fermented in the restored 1888 gravity cellar with gentle extraction; ~20% whole-bunch inclusion; matured in older puncheons and foudres.
