Tasting Note
Bright russet-gold; intense rancio aromas of dried orange peel, toasted almonds, wood smoke and honeysuckle. Momentarily off-dry on entry, then bracingly dry with vibrant acidity and a long, saline, nutty finish.

Western: aged Manchego, roasted pork belly, salt-baked fish, almond tart or pecan pie. Asian: miso-glazed black cod, char siu, salted egg yolk prawns, yakitori or spicy Sichuan dishes (small portions to balance).
Production Method
Free-run Palomino juice fermented then fortified with neutral spirit. Aged under a flor layer, flor later removed to initiate oxidative barrel maturation; fractional solera-style blending yields an average age ~48–50 years in oak.
