Tasting Note
Viscous tawny; concentrated raisins, dried apricot, toffee, caramel, fruitcake and spice, with hints of licorice and dark chocolate. Intensely sweet yet balanced by subtle acidity and a very long, refined finish.

Western: blue cheeses (Stilton), foie gras, fruitcake, crème brûlée, dark chocolate, pecan pie. Asian: mango sticky rice, Chinese mooncakes and egg tarts, pandan/kaya desserts, or serve alongside spicy Szechuan or Thai dishes to contrast sweetness.
Production Method
Late-harvest/partially raisined Muscat grapes partially fermented, fortified to around 17% ABV, then matured long-term in old oak casks with oxidative aging to concentrate flavors.
