Tasting Note

Tawny-amber fortified wine: dried fig, toffee, hazelnut, rancio and wood-smoke with concentrated dried-fruit sweetness, bright citrus-tang acidity and an extremely long, refined finish.


Food Pairing

Western: aged hard cheeses, foie gras, salted caramel desserts, pecan tart; Asian: Peking duck, char siu, miso-glazed dishes, salted plum or preserved-egg snacks, roasted nuts and sesame-based desserts.


Production Method

Fractional blending of Palomino and Grenache; fortified with neutral spirit, matured in oak using solera/nursery blending with components aged decades (average component age ~40–50 years).
