Tasting Note

Deep mahogany with an amber edge. Intense burnt toffee, treacle, molasses, brandied walnuts, coffee, dried mandarin peel and dark chocolate; viscous, rancio character with vibrant blood‑orange acidity and an exceptionally long finish.


Food Pairing

Western: dark chocolate, sticky toffee pudding, panforte, blue and aged cheeses, pecan pie. Asian: Chinese mooncake, red‑braised (hong shao) pork, Peking duck, miso‑glazed duck, sesame‑and‑honey desserts.


Production Method

Fortified with grape spirit and matured in oak puncheons in Seppeltsfield’s Centennial Cellar for ~100 years; slow oxidative ageing and topping produce concentrated, rancio-driven flavours.
