Tasting Note
Ripe apricot, green mango and pineapple with crème brûlée, brioche, cashew and marzipan; orange blossom and lemongrass lift the aromatics. Medium–full, satiny texture, bright acidity and a long, honeyed, mineral-tinged finish.
Food Pairing
Western: roast chicken with beurre blanc, lobster or shellfish, creamy pasta, pork chops, roasted root vegetables. Asian: miso-glazed black cod, tempura prawns, chicken katsu, milder Thai green curry, sushi with richer fish (e.g., salmon).
Production Method
100% Chardonnay; barrel-fermented with indigenous yeasts, underwent tailored bâtonnage and matured ~14 months in 100% French oak (≈30% new).
