Tasting Note
Perfumed red-fruit core of cherry, black raspberry and kirsch with violets and lavender, underpinned by black tea, forest floor, savory herbs and a long, satiny finish.
Food Pairing
Western: roast duck, lamb, pork belly, mushroom risotto, aged cheeses. Asian: Peking duck, char siu, miso-glazed salmon or black cod, shiitake mushroom ramen, Korean bulgogi.
Production Method
Fermented in open-top fermenters with partial whole-berry (some sources note destemmed); matured ~10 months in French oak (≈35% new).
