Tasting Note
Bright red cherry, red currant and wild strawberry with herbal sage/rosemary, leather and forest-floor undertones; plush texture, minty lift, fine integrated tannins and a long fragrant finish.

Western: roasted duck, grilled salmon, mushroom risotto, pork loin, charcuterie, soft cheeses. Asian: miso-glazed black cod, teriyaki chicken, Peking duck, Korean BBQ short ribs, braised pork belly.
Production Method
Hand-harvested; whole-berry fermentation with indigenous yeasts; matured ~10 months in French oak (c.25–40% new).
