Tasting Note

Aromas of crushed red cherries, raspberries, roses and lavender with hints of wild thyme and dusty earth. Medium-bodied, silky texture, fine-grained tannins, bright freshness and a fragrant, lingering finish.


Food Pairing

Western: roasted duck, mushroom risotto, grilled salmon, pork tenderloin. Asian: Peking duck, miso-glazed black cod, char siu pork, mushroom ramen, grilled shiitake with soy.


Production Method

Estate Hillcrest fruit, hand-farmed; fruit typically fully destemmed, fermented and aged ~10 months in French oak with about 25–35% new barrels.

Senses was founded by three childhood friends; Hillcrest Vineyard in Occidental is their estate site, sustainably farmed (Valdez & Sons) and vinified by Thomas Rivers Brown.
