Tasting Note
Concentrated blackcurrant and blackberry with menthol, graphite, tobacco and dark spice. Full-bodied, silky texture with firm fine-grained tannins, stony minerality and a long, chewy finish.

Food Pairing
Western: grilled ribeye or porterhouse steak, roast leg of lamb, braised short ribs, aged hard cheeses (Parmigiano, Manchego). Asian: Korean BBQ (bulgogi/galbi), Sichuan beef, Peking duck, Indian tandoori lamb, rich mushroom stir-fries.

Production Method
Estate-grown, hand-harvested fruit; fermentation in stainless steel with extended maceration; matured ~22 months in predominantly new French oak before blending and bottling as a single-estate cuvée.
