Concentrated dark cherry, blackcurrant and plum with violets, sweet spice and balsamic hints. Silky, juicy palate with fine-grained tannins, bright acidity and a long, savory finish.
Food Pairing
Western: grilled ribeye, roast lamb with rosemary, braised short ribs, aged hard cheeses. Asian: Korean BBQ (bulgogi/galbi), char siu, Peking duck, spicy Sichuan beef.
Production Method
Biodynamically farmed; varietals fermented separately in stainless steel and concrete eggs; matured ~22 months in French oak (≈78% new) and large casks, then blended and bottled.
