Tasting Note
Ripe pear, apple and white-peach fruit with citrus and nectarine; creamy texture with toasty vanilla/oak, light minerality and balanced, mouthwatering acidity on the finish.
Food Pairing
Western: cream soups, roasted chicken, veal, butter-poached lobster, creamy pasta. Asian: steamed black cod with ginger, miso-glazed salmon, salmon nigiri/sushi, mild Thai coconut curries.
Production Method
Lots fermented separately and aged sur-lie in small French oak barrels with judicious new oak; malolactic fermentation generally not induced to retain natural acidity.
