Tasting Note
Candied pineapple, mirabelle and honeyed stone-fruit with clear botrytis; viscous, opulent palate balanced by bright, juicy acidity, slatey minerality and a very long, refined finish.

Western: foie gras, blue cheeses, fruit tarts, crème brûlée, roast duck with orange. Asian: Peking duck, rich pork belly, dim sum (savory dumplings), spicy Szechuan or Thai dishes (contrast heat with sweetness).

Production Method
Hand-harvest of individually selected, botrytized berries; cool, slow fermentation (often native yeasts) in stainless steel after gentle pressing; minimal new oak influence.
