Tasting Note
Bright white-peach and green-apple fruit with intense slate/mineral drive, honeysuckle and saline notes. Precise, ripe acidity and medium body with a long, flinty finish.

Western: shellfish, grilled white fish, roast pork, roasted poultry, goat cheese. Asian: sushi/sashimi, sashimi, spicy Thai or Vietnamese dishes, Cantonese seafood and dim sum.

Production Method
Hand-harvested old-vine Riesling; cool, gentle pressing, native-yeast fermentation in stainless steel with extended lees contact; minimal-intervention viticulture (Fair'n Green/organic practices reported).
