Tasting Note
Amber-golden with honey, orange peel, dried fruit and nut aromas; very sweet, full-bodied, balanced by bright acidity and a long, persistent finish.
Food Pairing
Western: fine pastries (almond tart, crème brûlée), pâtisserie, blue cheese, foie gras. Asian: mooncakes, mango sticky rice, sweet dumplings, Chinese pastries, Middle Eastern/Arab sweets (baklava).
Production Method
Fermented in stainless steel to ~1080 density, fortified with 77% grape spirit to stop fermentation, prolonged skin maceration until March, then aged in oak (commonly ~24 months).
