Tasting Note
Citrine color; intense aromas of white flowers, citrus (lime/lemon) and stone fruit. Fresh, crisp high acidity, medium body, mineral undertones and a long, clean citrus finish.

Food Pairing
Western: grilled white fish, shellfish, ceviche, roasted chicken, fresh salads, goat/ricotta cheeses. Asian: sushi and sashimi, light tempura, Thai fish curry, Vietnamese seafood dishes, citrusy ceviche-style preparations.

Production Method
Destemmed, pneumatic pressing with controlled-temperature maceration; fermented in stainless steel with no oak ageing.
