Tasting Note
Straw-yellow, clean and intensely aromatic. Bone-dry with flavors of Golden Delicious apple, pear, citrus and a light mineral edge; crisp, refreshing finish.

Food Pairing
Western: seafood salads, grilled or poached fish, shellfish, light pasta with seafood, roasted chicken. Asian: sushi/sashimi, tempura, Vietnamese spring rolls, Thai seafood salads, light Chinese seafood dishes.

Production Method
Soft pressing with no skin contact; fermentation 10–15 days at ~18°C; aged in stainless steel at 15–16°C, bottled young.
