Tasting Note
Fine, persistent mousse with white-flower and citrus aromas, toasted brioche, hazelnut and chalk; rich yet precise palate of lemon, white peach, almond and saline minerality, finishing long and elegant.

Oysters and caviar; lobster or crab; truffled scrambled eggs; smoked salmon; sushi/sashimi and tempura prawns; dim sum (har gow), light Chinese seafood dishes; creamy Western cheeses and poultry with cream sauces.

Production Method
100% Grand Cru Chardonnay; traditional méthode champenoise with extended lees aging (~11 years) and low dosage (~4 g/L).

Maison Salon, founded by Eugène‑Aimé Salon in 1911, produces a single vintage Blanc de Blancs from Le Mesnil-sur-Oger; extremely limited, released only in top years.
