Tasting Note

Rich, savory umami with pronounced lactic acidity, notes of ripe orchard fruit, toasted rice and savory grain; full-bodied Yamahai texture with a lingering, savory finish.

Production Method

Junmai Ginjo brewed by Yamahai method: Omachi rice polished to 60%, natural lactic-acid development, slow traditional fermentation and careful maturation.


Vineyard Info

Toshimori Shuzo (利守酒造), founded 1868 in Akaiwa, Okayama. Producer of the Sakehitosuji brand; credited with reviving local Omachi rice and using traditional Bizen-yaki jars.
