Tasting Note

Rice-forward Junmai Daiginjo showcasing Akaiwa Omachi: ripe melon, white pear, toasted rice, delicate florals and sea-salt minerality. Silky, elegant texture with a dry backbone, gentle umami and a long, clean finish.

Production Method

Junmai Daiginjo brewed from Akaiwa Omachi rice polished to ~38%; low-temperature, multi-stage fermentation in small batches; typically pasteurized once and lightly filtered.

Toshimori Shuzo (brand: Sakehitosuji), founded 1868 in Akaiwa, Okayama. Credited with reviving Akaiwa Omachi rice and producing small-batch, rice-driven premium sake.
