Tasting Note

Delicate floral and melon aromatics with pronounced Omachi rice umami, gentle sweetness, layered acidity and a clean, slightly savory finish. Elegantly textured and food-friendly.

Production Method

Junmai Daiginjo made from locally grown Akaiwa Omachi rice; polished to ~50% and brewed with low-temperature fermentation.
