Tasting Note
Fresh pear, raspberry and plum with rose and jasmine; silky, warm entry that dissolves into dry minerality, citron, white pepper and licorice, finishing long and vibrant.

Production Method
Junmai Daiginjo assemblage: blend of multiple sakes from Yamada Nishiki, Omachi and Gohyakumangoku; predominantly Kimoto moto, five yeast strains, reserve sakes used; pasteurized; rice polished to ~35%.

IWA (Shiraiwa K.K.) is a Toyama-based brewery led by Ryuichiro Masuda in collaboration with Richard Geoffroy (former Dom Pérignon Chef de Cave), producing experimental premium sake since the IWA project launch.
