Tasting Note
Pale straw colour; aromas of lemon curd, mandarin and nashi pear with shortbread and custard hints. Medium-bodied, zesty citrus acidity with mandarin, yoghurt and flinty notes, creamy mid‑palate and a long, bright finish.
Food Pairing
Western: roast chicken, pork, creamy risotto, beurre blanc fish. Asian: miso‑glazed salmon/black cod, yakitori or grilled prawns, roast duck with hoisin or mild coconut‑based Thai dishes.
Production Method
Hand-harvested, whole-bunch pressed, wild-yeast fermentation; matured 8 months in French oak puncheons (50% new). Minimal intervention, small-batch single-block release.
