Tasting Note

Bright red and dark berry fruits (raspberry, strawberry, blackberry), plum, black pepper and warm spice; mocha/cedary oak notes, soft French‑oak tannins, silky texture and a long, clean finish.


Food Pairing

Western: grilled/barbecued steak, slow‑roasted beef, roast lamb, mushroom risotto, aged cheddar. Asian: Korean BBQ, char siu, spicy Szechuan or black‑pepper beef, miso‑glazed aubergine, teriyaki beef.


Production Method

Destemmed, 12‑hour cold soak, warmed and inoculated; pumped‑over twice daily during ~7‑day ferment; pressed, settled and matured 7 months in French oak barriques (10% new).

Saint & Scholar (est. 2017) owns ~50 ha in Adelaide Hills; founders include Ed Peter, Dirk Wiedmann and Reid Bosward. Winemaker Stephen Dew (Tim Dolan joined winemaking in 2022).
