Fresh oysters, steamed mussels, grilled white fish, goat’s cheese, green salad; sushi/sashimi, tempura, Vietnamese spring rolls, Thai green curry, steamed dim sum.

Fruit whole‑bunch pressed with minimal skin contact; cool stainless‑steel fermentation using selected yeasts to preserve varietal aromatics.
