Tasting Note

Garnet red with toasty oak, hedgerow fruits and a hint of coffee. Bright, fresh palate of ripe raspberry and red cherry, cocoa-like structure and toasted finish; medium-bodied, juicy and savoury.

Western: smoked salmon with crushed garlic potatoes, roast chicken, mushroom risotto, grilled salmon; Asian: teriyaki salmon, miso-glazed eggplant, char siu pork, Korean bulgogi.


Production Method

Fruit from low-cropping Southern Valleys vineyards; cool-morning harvest, 5-day cold soak, inoculated fermentation with hand plunging, pressed to tank and seasoned French oak, 100% malolactic, fined, lightly filtered.
