Tasting Note
Garnet red with toasty oak, hedgerow fruits and coffee. Bright raspberries and red cherry, cocoa-like structure, silky texture and a long savoury finish.

Western: smoked salmon, garlic crushed potatoes, green bean salad, roasted duck, mushroom risotto. Asian: teriyaki salmon, miso-glazed pork belly, char siu, shiitake stir-fry.
Production Method
Fruit from low-cropping Southern Valleys vineyards; 5-day cold soak, inoculated fermentation with regular hand-plunging, pressed to tank and matured in seasoned French oak; 100% malolactic; fined and lightly filtered.
