Tasting Note
Creamy stone-fruit and citrus (peach, mandarin, grapefruit) with toasted spice, vanilla and subtle smoky oak; rich, silky palate with preserved lemon, honeydew and biscuit, lively acidity and a toasty finish.

Roast chicken with lemon & garlic, pork loin, mushroom risotto, creamy pasta, grilled salmon or lobster; Asian: miso-glazed salmon, salt & pepper prawns, tempura, mild Thai green curry, sushi (richer fish).
Production Method
Light whole-bunch press, barrel fermentation in American (and some French) oak with c.16% new American oak; malolactic fermentation followed by 9–10 months lees ageing with bâtonnage.
