Tasting Note

Pungent green aromas of blackcurrant bud, fresh herbs and a saline hint. Fresh, vibrant palate with blackcurrant leaf, tomato/green capsicum, white peach and citrus, finishing with a mineral sea‑salt thread and focused acidity.

Food Pairing

Western: freshly shucked oysters, ceviche, grilled white fish, goat cheese salad. Asian: sashimi/sushi, Vietnamese fresh spring rolls, Thai green papaya salad, light seafood stir‑fries and chilled shellfish.

Production Method

Single‑vineyard fruit pressed quickly to minimise skin contact; settled and fermented in 100% stainless steel with selected yeasts at cool temperatures to retain fruit purity. Vegan friendly.
