Tasting Note
Medium-bodied Pinot Noir with red cherry, raspberry and cranberry, subtle plum and dried thyme, savoury spice, light toasted oak and silky texture with fine tannins and a long toasty finish.
Food Pairing
Western: roast lamb, beef stew, mushroom risotto, duck breast. Asian: char siu or Cantonese roast pork, teriyaki salmon, miso-glazed eggplant, Korean BBQ (bulgogi).
Production Method
Cold-soaked ~5 days, small portion whole-cluster (~8%), hand-plunged fermentations, 100% MLF, aged ~10–11 months in French oak (c.24% new).
