Western: roast chicken, butter-poached lobster, creamy pasta (fettuccine Alfredo), roast pork, soft cheeses. Asian: miso-glazed black cod, salmon teriyaki, tempura, creamy coconut-based Thai dishes (mild), sushi with richer fish.
Production Method
Barrel-fermented and aged ~9 months in a blend of French and American oak (about one-third new). Full malolactic fermentation, sur-lie aging with periodic lees stirring; blended from multiple Carneros sites.
