Tasting Note
Dark ruby with aromas of blackberries, cherries, flowers, smoke, licorice and spice. Medium–full-bodied, creamy texture, plush sweet fruit and velvety, integrated tannins with a long, spicy finish.
Food Pairing
Roasted lamb, braised beef, ribeye/steak, mushroom risotto, aged cheeses; Peking duck, Chinese red-braised beef, Korean BBQ (bulgogi), char siu, beef hot pot.
Production Method
Hand-harvested, sorted; parcel fermentation in small vats, malolactic fermentation in barrel, aged on lees in French oak (approx. 12–18 months), unfined and lightly filtered.
Vineyard Info
Small family estate (~7 ha) on Saint-Émilion right bank; 'vin de garage' origins. Stéphane Derenoncourt has been consultant. Acquired by Eric Prissette in 1994; later owners (from 2009) are Alexandra and Nicolas Robin.
