Tasting Note
Pure red and black cherry, wild strawberry and violet with subtle spice, stony minerality and fresh acidity; firm, noble tannins and a fine, slightly spicy finish.

Food Pairing
Western: roast duck, coq au vin, mushroom risotto, pork loin, beef bourguignon. Asian: Peking duck, char siu (BBQ pork), mushroom-and-soy stir-fry, soy-glazed salmon.

Production Method
Hand-harvested Pinot Noir; mostly destemmed with cold pre-fermentation maceration, temperature-controlled alcoholic fermentation and ~12 months in French oak (c.30–40% new).
