Tasting Note
Bright red cherry and raspberry with floral violet, earth and light spice. Medium-bodied, fresh acidity, silky tannins and a gently toasted oak finish (medium length).

Western: roast lamb, beef fillet, mushroom risotto, roasted duck, semi-mature cheeses. Asian: beef tataki, duck or chicken teriyaki, char siu pork, Korean BBQ (bulgogi), mushroom-based Japanese dishes.
Production Method
Hand-harvested Pinot Noir; ~30% whole clusters, native-yeast fermentation, gentle extraction; malolactic fermentation and 12–18 months élevage in French oak barrels (limited new oak).
