Tasting Note
Ripe cherry, plum and raspberry with black-cherry depth, subtle slate minerality, gentle spice, fine velvety tannins and lively acidity; medium-bodied with an elegant, persistent finish.

Food Pairing
Western: roast lamb, beef fillet, duck breast, mushroom risotto, aged cheeses (Comté, Gruyère). Asian: hoisin/Peking duck, char siu pork, grilled salmon teriyaki, mushroom stir-fry and soy-braised pork.

Production Method
Hand-harvested fruit; cold maceration and temperature-controlled fermentation; aged 12–18 months in French oak (partial new), bottled at the domaine.
