Tasting Note
Blackberry and plum framed by floral lift and stony minerality, with cedar, toasted hazelnut and subtle coffee/oak spice. Silky texture, fine tannins and a long, savory finish.

Western: beef bourguignon, roast duck, pheasant, mushroom risotto, coq au vin. Asian: Peking duck or hoisin roast duck, teriyaki or miso-glazed salmon, mushroom stir-fry, Korean bulgogi with mushrooms.

Production Method
Hand-harvested and sorted; traditional fermentation with extended maceration; aged ~12 months in French oak barrels (≈40% new).
