Tasting Note
Pale salmon-pink with aromas of ripe strawberries, raspberries, pink grapefruit and white peach. Palate shows red-berry fruit, brioche, toasted almond and citrus zest, with a fine persistent mousse and a long, elegant finish.

Food Pairing
Western: oysters, lobster, smoked salmon, grilled sea bass, seafood ceviche, berry tarts. Asian: sushi/sashimi, tempura, Thai prawn salad, light spicy Vietnamese dishes, steamed dim sum.

Production Method
Méthode traditionnelle (traditional method). Partial fermentation in old Burgundy oak barrels, 36–53 months on lees bottle ageing, then disgorged and finished as a Brut rosé.
