Tasting Note
Pale lemon with fine bubbles. Aromas of lemon sherbet, baked apple, brioche, almond nougat and hazelnut. Palate shows honeyed brioche, citrus curd, baked orchard fruit, sweet spice and a long saline-tinged finish.

Oysters, smoked salmon, lobster, creamy pasta, roast chicken; sushi/sashimi, tempura, dim sum, spicy Thai prawns, Cantonese steamed fish.
Production Method
Traditional method (méthode traditionnelle) with secondary bottle fermentation; partial fermentation in old Burgundian oak, ~36 months lees ageing and a low dosage (≈6 g/L).

Roebuck Estates (founded 2013) near Tillington on the South Downs. Fruit from Roebuck and Little Brockhurst vineyards, chalky soils, focused on English sparkling wine production.
