Tasting Note
Fine creamy mousse with citrus, ripe stone fruit and baked apple aromas, layered with toasted brioche, honey and roasted almond. Silky texture, bright acidity and a long, elegant finish.

Food Pairing
Western: oysters, lobster, smoked salmon, aged Comté, fried chicken. Asian: sushi and sashimi, tempura prawns, Cantonese dim sum (har gow), Korean fried chicken, light Thai fish curries.

Production Method
Whole-bunch pressing of Pinot Noir; partial fermentation in old Burgundian barrels (≈4% of wine), ~58% malolactic; méthode traditionnelle bottle fermentation with lees ageing for a minimum of 48 months.

Roebuck Estates (founded 2013 by Mike Smith & John Ball) farms several Sussex sites; Roman Villa is a single-vineyard source. The estate focuses on classic Champagne varieties and refined English sparkling wines.
