Tasting Note
Golden-copper hue with baked apple, lemon and ripe stone fruit; brioche, toasted almond and subtle red-fruit notes. Fine mousse, silky texture and a long, crisp finish.

Lobster, oysters, aged Comté, steak tartare; sashimi, sushi, tempura, sambal-style seafood, light Thai curries.

Production Method
Méthode traditionnelle; whole-bunch pressed, partial fermentation in French/Burgundian oak, bottle-aged on lees 36–48 months with low dosage.
