Tasting Note
Ripe black cherry, blackberry and plum with baking spice, sandalwood and bergamot; medium‑full body, bright acidity, silky tannins and a long, spice‑tinged finish.

Western: grilled steak, BBQ ribs, roast lamb, pizza, aged cheddar. Asian: char siu, Korean BBQ, hoisin/roast duck, spicy Szechuan beef, teriyaki chicken.

Production Method
Head-trained, dry-farmed vines; hand-harvested, open-top fermenters with 2–4 day cold soak and regular punchdowns; aged ~14–16 months in French Burgundy oak (≈20–25% new).
