Tasting Note
Perfumed red cherry, dried strawberry, rose petal, blood orange, and baking spice with forest floor, truffle and savory leather notes. Energetic acidity, firm polished tannins and a long, mineral-tinged finish.
Food Pairing
Western: braised beef, roasted lamb, mushroom risotto, tajarin with white truffle; Asian: Peking duck, miso-glazed black cod, beef rendang, Korean bulgogi; aged cheeses and umami-rich dishes.
Production Method
Hand-harvested Nebbiolo; indigenous yeasts; long submerged-cap maceration (~60 days) in wooden vats; extended aging in large neutral Slavonian oak botti and concrete, minimal intervention, unfiltered.
Vineyard Info
